Is it worthwhile for me to simply run Bitcoin Core on my laptop all day? Even if I don't hold any coins in the wallet that's monitoring the ledger?

Worthwhile is your choice, that's what's cool about it.
In doing so you contribute to the decentralization of the network.
At the same time, there are other ways to run a node, and doing so can take time and computing power. The whole chain is a lot of data.
Does this make sense?

you don't need to. I usually turn on my laptop gui node to create a transaction with my hardware wallet.
my desktop node runs one 24/7 to send notifications to my phone, as well to provide blocks for my lightning node.
Makes sense. I haven't gone as far as setting up a separate node yet. I understand the value of running a node though, so I've found this to be an easy route.
I usually just run the node at home and use a separate laptop to work during the day.
