Are you doing your own developing? The developer you use will really give you what you are looking for.
You can of course change in Photoshop, which is what I have found works best. Of course that isn't "authentic", but it lets you save photos that you probably wouldn't find acceptable otherwise.
Otherwise high speed film is more contrast-y, but also MUCH more grainy, which isn't a bad thing. Also great for night time shots. Costs more.

If you really want to go down the rabbit hole, you can make your own film. That will give you a look unlike most anyone else.
