Replying to Avatar Brisket

It's the only way to eat cabbage in my book.

I personally prefer kimchi and use wom bok, radish/daikon, onion, ginger, garlic, chilli/peppers, salt & fish sauce.

Same deal though I go by taste after about 5 days. Lacto fermentation is pretty easy & safe once you've made a few batches.
