Celery no good
Sadly most cured meats will either have nitrates or celery which is rich in nitrates
Beef jerky is great, but not when it's loaded with seed oils.

Does it matter if they are naturally occurring?
I would also counter that there are levels to it and jerky is a much better alternative to lots, but with certain types nitrates are a problem, but still better than eating oreos or whatever
Since going full carnivore I've become much more sensitive to plant toxins
Meats with celery (or Swiss chard) make my mouth feel dry & itchy (astringent?)
Then my stomach hurts; over the next few days my dandruff gets much worse and I excrete some sort of irritating material from my eyelids (similar to oxalates)
Or the whole thing is psychosomatic
