One month later and literally zero sats have been routed into this channel lol. Everything still seems to be going to into my original channel. 🫠

What would need to happen for the new channel to become a more “popular” routing channel?

I have no idea. Probably just an obscure LSP that isn't that well connected so everything's still routing through my other channel with the better connected LSP.
