Grilling with Parmesan cheese on top (after flip), works best for me.

Slice it, salt it, wait a little while, bake it or grill it with olive oil. You can do so much with the humble eggplant. 🍆

I like to bake it with cheese and marinara

I also like grilling. Dries it out then I chop and add oil balsamic and herbs.
