Meatloaf, basically a giant meat ball, one of my favorites. This one is composed of 2/3 Italian sausage, 1/3 ground beef, prosciutto, shiitake, button mushrooms, bread crumbs, garlic, shallots, parsley, oregano, and I don’t even know how many pounds of tomatoes. All season long I like to keep slow roasting maters drenched in olive oil. I vac seal them and freeze. I have an entire chest freezer just dedicated to tomatoes.
