Is it so that unless you run your own lightning node, there is no way to have privacy on lightning, even if a wallet is FOSS and self-custodial, as is the case with Phoenix?

Not as private as any of the apps above as you pass your invoices to the swap provider

True, but you can use Tor to access the swap provider and with confidential transactions you can hide everything else from the rest of the world.
