Getting a cold wallet for long-term storage of larger amounts, but is Coinbase ok to use or another newbie mistake??

Not your keys, not your coins.

Leaving your Bitcoin on any exchange opens you up to the risk of ending like FTX creditors sooner or later.

It’s not a matter of "if", but "when".
