There’s a1 milk and there’s a2 milk. a1 and a2 are references to the beta-casein protein profile.
a1 is the more inflammatory harder to digest milk. This milk comes from Holstein cows.
a2 is that milk. This comes from Jersey and Guernsey cows.
When sourcing your raw dairy you should lead with one of two questions: Is the cows pasture raised grass-fed grass finished? OR Are they Jerseyor Guernsey cows?
If the answer to either of these is “No.” then promptly walk away after shaking that dairy farmers hand (Because they’re still ranchers).
