They are preserved to make umeboshi - very salty and sour flavor with a familiar taste of plum.
Umeboshi is added to rice to make onigiri π (rice balls) or as topping on plain rice π bowl. Itβs also used in a variety of dishes like pasta π, tofu, chicken, fish, chips.
