I finally got around to pickling some peppers, a variety of them, like jalapeno, tabasco, and another one that i dont remember. Added some fresh onions and garlic, so it should be good. #homesteading #foodstr

I mixed some of this into some softened cream cheese, and dang it was good!😋😋 Nice little change up for a dip.

If you like pickling you should try brine fermenting, you'll love it.

I've been eating from the same ferment jar for 6 months now since I learnt about it.

About 5% salt, that's it.

Add pretty much whatever you want.

I was fermenting chillis and tomatoes over summer, same jar is now full of cucumbers and garlic.

The Chinese woman I learnt this from, she had a living ferment that was 300 years old, passed down through her family.

They even have special jars over there where you fill the top part with water to create an air lock, similar to how you have airlocks on barrels when fermenting alcohol.

These are the jars they use for it, you can use any jar however they've been doing this for a thousand+ years and figured out this is the best shape.

Older jars were made from ceramic rather than glass but the glass versions are way more popular today.

I've been meaning to buy a couple but really any large jar will work it's just keeping the bugs out while letting gasses escape so it doesn't explode or suffocate.

I actually have made fermented pickles like that. Good stuff, i should do more of that.
