I use a combination myself. I have a home server that isn't accessible from outside my network. This holds my most private info. My phone, contacts, calendar, documents etc all sync to this.

Then I have a privacy focused VPS in a country with good privacy laws which runs any services I want to make (semi-)public (eg sharing photos with family).
