They're definitely 🐻, specifically polar 🐻
And the restaurant I was at for a decade made lamb the best I've ever had. They did it over fire so not sure I can help you too much there (other than: maybe give 'em some smoked salt), but serving them over a hazelnut and almond romesco made with garlic and roasted red peppers and topped with some lightly dressed arugula was something I didn't appreciate enough until it wasn't in my life on a weekly basis.
The sort of thing that makes one almost want to go back into food service. Almost.
