I don't know if this is useful to anyone in the UK, but I find Monzo is by far the most exchange-friendly bank I use.
Good off-ramps are as important as good on-ramps.

Agreed. Monzo has the best customer service in general too. Only letdown is international payments. Revolut is way better for that even though they're not actually a bank - don't keep money in it but transfer in as Euros to use Robosats or Peach.
