I’m not interested in doing the whole self sovereign security server system. I’m happy to pay a company for this service, I just don’t want it calling home to Google and all that

I don't have much to steal at least nothing that can't be replaced. Like you mentioned, I don't like the ideas of cameras and unknown eyes watching me. Creepy.
It’s not cameras which are creepy to me. It’s the Google and Amazon products which use facial and voice recognition software, etc.
Tradition security cams which store footage and delete after N days, that’s totally reasonable IMO
