Why hasn't a client added this feature? It's insane.

How can it be universal if no one bothered to write a standard for it? These app developers are useless.

There was a NIP written for lightning polls but went nowhere.

Because Lightning polls are stupid and we should replace that NIP with a proper poll NIP. If only anyone knew how to.
