Anyone know if there is a way to disconnect the computer for tracking etc on newer vehicles to disable it to not screw with driving the vehicle

Easiest way to not be tracked by your vehicle is not buying anything past 2010, or looking to companies that haven't developed a reputation for doing this shit (rapidly shrinking by the day).
It really depends on where the modem is.
In some Ford vehicles, the Telematic module has a separate fuse and can be removed.
Would need more information, (year, make, model, etc). To look over there networks and schematics to be more specific.
