Experiment in #baking today: turning melted ice cream into cake!
Especially strange considering itโs made from ice cream, this cake is not very sweet. Fixed the problem with an โicingโ of sweetened sour cream (which is the best cheesecake topping, by the way) and a sprinkling of peach Bellini sugar from the Spice and Tea Exchange in Charleston ๐
NOW itโs good! Thereโs an added benefit of covering up the oddly pale top.
Itโs hard to go wrong with extra pecans, and Iโm glad I added some to the blend of butter pecan and maple walnut ice creams from Amos Miller! Next time I make a melted ice cream cake, Iโll probably add a little sugar and maybe use less flour as well. This one was based on this recipe (though because I donโt have baking powder, I used 1/2 tsp baking soda instead)
Enjoyed with a little Cinnamon Plum black tea from Republic of Tea.
