Experiment in #baking today: turning melted ice cream into cake!

Especially strange considering itโ€™s made from ice cream, this cake is not very sweet. Fixed the problem with an โ€œicingโ€ of sweetened sour cream (which is the best cheesecake topping, by the way) and a sprinkling of peach Bellini sugar from the Spice and Tea Exchange in Charleston ๐Ÿ‘

NOW itโ€™s good! Thereโ€™s an added benefit of covering up the oddly pale top.

Itโ€™s hard to go wrong with extra pecans, and Iโ€™m glad I added some to the blend of butter pecan and maple walnut ice creams from Amos Miller! Next time I make a melted ice cream cake, Iโ€™ll probably add a little sugar and maybe use less flour as well. This one was based on this recipe (though because I donโ€™t have baking powder, I used 1/2 tsp baking soda instead)

Enjoyed with a little Cinnamon Plum black tea from Republic of Tea.
