My only complaint is that I wished that they worked the heat into the truffle more. Most of the heat comes from the ghost pepper salt that they put on the top of the truffle with a little bit of the fruit flavor coming through in the chocolate.

thats a little disappointing. so its on the top heat.

id think you could use a little pepper in the double boiler when preparing the chocolate

I've never really messed with chocolate But I think it would be a fun experiment to try to make my own.

slow, double boiler heat is the key.

you'd do the filling first, with like choc, butter, sugar, maple, and a little bit of ghost. slow folding until consistent, make balls using two spoons, throw them on a sheet pan with wax paper in the walk in until theyre firm, then in another double boiler do just choc, for the hard shell exterior.
