Thats easy to remedy. Cook to a higher temperature if you prefer medium (145°F) or well done (160 °F). I tend to favor medium-rare.

Bacteria would be primarily on the surface which is why we cook meat at all beyond preference.

It's sooooooooo gooood and probably easier to digest
