If one of moneys' properties is theoretically store of value, should we not stop calling Fiat money, and start referring always as currency?

yes - currency is always official money of the state (no matter if it has or will have any of its properties good or bad)

same like king is king , president is president - no matter who bad the person is currently sitting - its official position.

anything that property of something can be called by that name but does not become so.
