I feel like most people have a strong preference. I will eat them rare all the way through well done. My go to for quick easy no clean up sirloin steaks is an air fryer. 375 for 16 minutes. People tell me I’m ruining the steak but I’d rather be working than manning the grill for 13 minutes.

Restaurants typically undercook. If they get the temperature wrong undercooking, they don't have to throw it away
I heard restaurants sous vide steaks to just under the temp it should be served at and then just sear to temp. Maybe potential for undercooking there.
I've had fine restaurants tell me the chef recommends medium rare. I figure it's to render the fat. I ignore the recommendation.
