Today’s harvest. What am I going to do with all these huge zucchini. They get too big before I have a chance to pick them!

Those tomatoes look amazing! I bet a nice caprese salad made with them would be glorious.
Before I had ever heard the name “caprese salad” my family just called it “a plate of tomatoes”. Fresh tomatoes from the garden, red onion, crumbled blue cheese, chopped basil, avocado, salt, pepper, and olive oil. (Some in my family prefer mayo to olive oil, but they are heretics.)
Peal it
De-seed it
Grate it
Freeze it in 2 cup portions
Why 2 cups? That's what the zucchini bread recipe calls for
