I mean in a F-C-F (Fiat-to-crypto-to-fiat) remittance:

Alice pays dollars to a service, which converts those dollars to crypto, transmits the crypto internationally, converts back to local currency, and pays Bob.

Why is Bitcoin better (or worse!) than any other stablecoin, token, shitcoin?

What about Lightning and Liquid?

If your receiving end taxes or prohibits Bitcoin conversions, then Lightning won't do. But that's a good point about liquid or possibly another of the "impure" sidechains; if they are tokens then they may be able slide past regulatory scrutiny, temporarily.
