What would be cool is if there was a replaceable nostr event that contained a JSON list of mints and their status. I want my apps to be able to fetch a list of mints, and the obvious way to do it is through a nostr event.

You can use Nip-87 for fetching cashu mints from nostr relays. But no statuses tho. You could fetch them on the front-end or something. Or me and nostr:npub1fa789c2c57agz7v5w90yesvf3myd5jakjzgz28w7jl8fvqchy6nqlu6rn6 releasing a cashu mint api soon 👀
