I have built a multiplexer relay though so after some more testing I should be able to clear out my relay list and just use that.

Is there a recommended minimum number of relays?

I wouldn’t go below 6, but you should only use paid relays in the Global feed. I’m currently up to 21 including my Umbrel personal relay.
