i’ve been doing pretty much the same thing, except i’d reverse sear in the air fryer (i.e. oven essentially), but it’s so easy to fuck up the timing in the air fryer dependent on the thickness of the cut - and getting it out to check the temp every couple minutes is annoying

i’ve got a ziggler, which is like an australian version of a webber, but it’s a direct heat bbq, it can’t really maintain low temperatures - but i could give it a whirl
