Sorry I got confused the original is the correct way
the mkdir doesn't need the first slash so it creates the folder into the drive
mkdir -p data/bitcoin
When you write to your home directory does it show up inside the home directory on the larger drive? Depending on the Linux setup I'd imagine it would be on the drive where Linux runs, but I can't know that.
Might have to map/mount your large drive and make that your default home.
