It's a tasty Guatemala with nice juicy body and a jammy sweetness with tightly structured acidity on top. I'm getting lots of chocolate, a nice selection of assorted toasted nuts, and dark cherry sweetness, particularly on the finish. I’ll continue to tweak the profile over the next few weeks. Surely, pleasing new flavor sensations will be unleashed.
