If you were chased by pennywise, you would find a creative way out, and sometimes for myself, thinking under stress actually slows down ‘relative time’ and often you think of a different way to do something due to a short time of reflection.

But yes, overall I agree, as a chef, many times you need to be chill and relaxed; on the flip side i have seen way too many chefs over think and ruin greatness because they were not under time pressures
