i wish i understood this stuff more. Core vs....? I thought Bitcoin was just Bitcoin, run by no company, no CEO, etc. How do you translate this in layman's terms?

Bitcoin is software.
The most widely used version of Bitcoin is maintained by the bitcoin “core” developers.
Some times developers get an itch to fix something that’s not broken.
Node runners run Bitcoin and decide which version they want to run.
If a change is made that the node runners don’t like they can choose to not update, or switch to different version.
Recently core developers have decided to set unreasonable default values for the OP_RETURN limit and plan to remove the option to configure the limit from the GUI.
