Taking care of the 100+ olive trees on our land turned out to be much more fun than expected. Lots of clean-up and landscaping, before step-by-step we learned the craft of producing our own olive oil ... guided by local old foxes 🦊 After four years and three harvests, we are now ready to sell our first batch of oil.
A very limited amount. But one with special qualities. We like to say here that this isn't olive oil ... it's medicine. 100% natural organic farming, no pesticides used whatsoever, no plowing the fields. The trees are of a special resistant type and don't even require irrigation. The long summer period without rains makes the oil extra rich in nutrients and taste. Our oil is mostly from the Athenolia type, blended with wild acebuche olives which are super rich in polyphenols. You know, the stuff that makes you get a 100 years old. If you don't stress out 🌿
