I pay Bitcoin businesses in Bitcoin because it is in my self interest to do so. If they have more Bitcoin in the company coffers then the business has a higher chance of succeeding and being there next time I need to make a purchase.

This must be in Europe as you should be able to use Strike app to spend fiat and pay in Bitcoin!
