My daughter is 2 years old, so I think of homeschooling too.

Almost any country will do. Some force you to teach your kids, but you can do it by yourself (like Austria and France). Others don't care at all.

Then there's always the possibility to do homebirth, so the state just doesn't know of your child.

No tax number, no school indoctrination, no conscription...
