I prefer to have all the animal proteins listed on a weekly basis, perhaps with the exception of poultry. This shows my bias of one raised and living near the ocean, where aquatic proteins are plentiful.. I would ideally use about 60% beef, bison, bear; 30% fish (salmon, halibut, other whitefish); 10% everything else (shellfish, poultry, rabbit, lizard, rodent)

I didn't mention pork or lamb; I would group them in with beef, bison, and bear, but in a much smaller percentage in that grouping. So of that 60%, maybe 10% pork, 5% lamb, based on availabilty. If I were in a region where goat is commonly available for meat, or other large herbivore or omnivore, that would be here too.. Where I am currently at, beef, pork, and chicken are most available, as well as shrimp and salmon.
