Lol. This is an old trick. The purified water was already below freezing temp, just needed to be disturbed so it could crystalize.

That's not too uncommon. he probably left it out in the cold last night and it didn't freeze because it was still under pressure by being sealed in the bottle.
as soon as you open the top the pressure is released and the freezing point for the water is raised.
