Secured our yearly side of beef with a mid August harvest date, will hang dry age 21 days before processing. Yes, coincidentally, 21 days dry aging is the right amount of time.
If anyone is curious, currently our rancher is charging $3.25 hang weight.
And processor is charging $1.45 hang weight which includes everything that was initially charged separately.
