It's not a single relay, it aggregates multiple relays to a fast and reliant single connection, and also filters spam from them. So it saves the user mobile data, battery and provides a better ux
They are pretty usable on Amethyst with paid relays only
Afaik they can only see unencrypted stuff if you for example login to a http website, but most websites use encryption so this is not a problem. In lightning is nothing to steal for them too.
Better privacy, your node is visible in the network and people can see your IP address and your capacity.
Also you can easily access your node from everywhere without port forwarding and networking stuff (tough there are other solutions too like cln commando or lnd lnc)
Downside is tor is extremely unreliable and annoying to use. Sometimes it works, sometimes it doesn't. Fetching an invoice on Zeus connected to your Node via Tor can take like ~2 minutes. Also there won't happen much routing on your node due to this.

Worth trying to lawyer check this, often these suing lawyers are charging unrealistic fines which can be quartered with the right formal letter (if the claim is even legally justified at all)
Don't exactly how RCS works or what it is, here everybody uses WhatsApp. On sms4sats.com you can get phone numbers to register for services like WhatsApp so you don't have to use your real number

You can set permissions on the google maps app (disable background data and enable battery optimization) so it doesn't run in background.
Also apps in graphene (including gapps) run somehow sandboxed which seems to prevent them from sending too much of your data home. Β―\_(γ)_/Β―
But there are also usable open source alternatives, osmand is a navigation based on open street maps, but it won't find so most names so there is a app called acastus photon to convert street names to coordinates π
