If you want to use GrapheneOS with default settings just use stock Android. It will be more secure and privacy oriented.

Disable auto-updates and their App app.
Disable all connections to Graphene servers.
Don't allow them to collect data about you.
Download updates using Tor and sideload them.
GrapheneOS is NOT a privacy oriented OS.
If you use GOS the default way it's more anty-privacy than using stock Android.
