Why you might want to opt out from data collection?
1οΈβ£ Advertising
Advertising companies are middlemans, collecting data on users, to advertise to them their companies ads. They lock in users by having many companies, and lock in companies by having many users with advertisement profiles.
The more data is collected, the better your profile, easier to sell you things you don't need.
Usually these companies are offering free services in return for showing you ads. But the main issue is, they are earning money by selling you stuff, instead of making their free service better.
That is why, in most cases, after companies get big enough, and unexitable by locking their private and business customers in, they can start to decrease or just don't improve the quality of their service.
In such a case, they are only incentivized to milk you more, because where could you go?
2οΈβ£ Used against you
Your search history may reveal interesting things about you, when you search for something you did not understand, and by grabbing it out of context, it can be used against you.
E.g.: your bag beeps on an airport, and you look for, what these detectors beep for. Then voilΓ‘, grabbing this out of context, why did you look for this info? Do you want to carry something that could beep?
We can even hear stories, where you can get into trouble only by being connected to other bad people. E.g. buying a second hand phone, that was used by a criminal before. (Of course bad is from the perspective of people in control. This definition can also easily change. For the better or worse)
3οΈβ£ Stolen
Colleced data can also be stolen. If 1-1 company stores huge amount of information about you, it even makes it easier, because only they have to be hacked.
Stolen data can be used for identity theft (e.g.: applying for loan and make bad credit for the stolen identity), credit card copying. So basically to stole money with it.
4οΈβ£ Control you
Data collection is the basis of surveillance and control. If lot of your data is collected, it will be easier to predict your behaviour with a bigger accuracy. Therefore, it will be easier to control you.

I think it is the best to assume, that everyone knows your IP, your relays and your apps.
Because it is possible that it is logged. And coming from Murphy's law, it will be logged.
And just as an extra, even servers from which you load images are seeing your IP, and can log it.

That is enshittification in my opinion of Proton.
VPNs will be slower for sure. Because you have added route to your browsing to mask your IP.
Also you will get more captcha for sure.
I think that will only change, if VPN usage is normal, and masses will move from a site that is shitty.
