Today’s kitchen adventure was all about turning a simple afternoon into a festive baking session with the little ones. We made delicious Apple Jacks from scratch, and let me tell you, the house smells like cinnamon-spiced heaven!
For the pastry:
• 2 ½ cups all-purpose flour
• 1 tsp salt
• 1 tsp granulated sugar
• 1 cup (2 sticks) unsalted butter, cold and cubed
• 6-8 tbsp ice water
For the filling:
• 3 medium Honeycrisp apples, peeled, cored, and finely diced
• ½ cup granulated sugar
• 1 tsp ground cinnamon
• 1 tbsp all-purpose flour (to thicken the filling)
• 1 tsp lemon juice (to enhance flavor and prevent browning)
• A pinch of salt
For assembly:
• 1 egg, beaten (for egg wash)
• Granulated sugar for sprinkling
Here’s a quick peek at our recipe:
• Pastry: We started with a basic dough using flour, a pinch of salt, a little sugar, and plenty of cold butter. After chilling, it was perfect for rolling.
