You won't gain anonymity but a level of privacy enough to make it hard for most people to track you.
There is a centralizing force, yes. But it's also some convenience in decentralizing the liquidity and it would also be good to use smaller coordinators.
Every few weeks there is enough liquidity registering to https://coinjoin.nl 🕶️ but I’m in no way useful to the people that want to anonymise 100+ BTC, as my typical liquidity is several million sats with ~4 anonscore.

Looks like they are still conflating crypto with bitcoin. It's very important to note here that the ''criminals'' are sending bitcoin to themselves in a collaborative transaction we call coinjoin. It's one of the best onchain privacy tools we have, next to trustless swaps to lightning. Privacy =/= criminal, in my experience the majority of bitcoin users just want forward spending privacy and a coordinator like https://coinjoin.nl makes that easier. It's also very easy to run your own community coordinator. Remember, KYC is the crime.
