Pickled peppers are delicious and good for gut health. Also a good way to extend the life of your vegetables.
This is a concoction of Big Thai Chili and Giant Marconi Peppers, diced Onion, Garlic in apple cider and regular vinegar.

Clover is one of many cover crops. The reason I use clover is because it will stay small and won’t outcompete my main plant. Along with protecting the soil from the sun, cover crops also bring life to the soil through production of sugars feeding microbes. Another great feature is that clover uses atmospheric nitrogen instead of soil nitrogen. So when you trim and mulch these plants you are adding carbon and nitrogen to the soil as well and earthworms appreciate you.
The roots will also act as a penetrator into the soil, de-compactor, and water pathway.
Lot of benefits from cover crops! I highly recommend them for organic gardening.

So I started my seeds in late December early January. Some seeds I started in March. Still harvesting decent amounts throughout the week and looks like a great future ahead for these same plants.
These are super sweet tomatoes, gobstopper tomatoes, shashito peppers, lunch box peppers, and orange sweet peppers.

Microbes thrive from these type of organic amendments. In turn the microbes create a soil food web network that adds stability to your plants. Feed the soil correctly and it will become even more fertile in coming years.
Organic farming is simple when you use amendments. My main few I like to use are Blood meal, Feather meal, fish bone meal, fish meal, kelp meal, alfalfa meal, bat guanos, ground oyster shell, ground egg shell, compost, top soil.
I also use clover ☘️ as a cover crop to add protection and life to the soil. It will eventually turn into a humus and feed carbon and nitrogen back to the soil.
I also mulch up my trimmings back into the top soil and let it rot back into the ground.
