Experiment in #baking today: turning melted ice cream into cake!
Especially strange considering it’s made from ice cream, this cake is not very sweet. Fixed the problem with an “icing” of sweetened sour cream (which is the best cheesecake topping, by the way) and a sprinkling of peach Bellini sugar from the Spice and Tea Exchange in Charleston 🍑
NOW it’s good! There’s an added benefit of covering up the oddly pale top.
It’s hard to go wrong with extra pecans, and I’m glad I added some to the blend of butter pecan and maple walnut ice creams from Amos Miller! Next time I make a melted ice cream cake, I’ll probably add a little sugar and maybe use less flour as well. This one was based on this recipe (though because I don’t have baking powder, I used 1/2 tsp baking soda instead)
Enjoyed with a little Cinnamon Plum black tea from Republic of Tea.
