In your climate I would harvest the ripe ones earlier and cure them in sunshine (if safe from frosts) for a couple of weeks before storing.

Happy to see this one in the garden tonight. Not happy my dog found it first but it was only barking at it. Shortly after I took this photo the hedgehog thankfully moved off into the undergrowth to get on with their nights foraging.
