Keto Cookies 🍪 this is my first attempt to bake without regular grain flour, almond flour seems ok though, so far good workability with dough.

Ingredients:

1 cup almond flour

Quarter cup coconut flour

60 gr butter - room temp

1 egg - room temp

3 tblspn cocoa

Half teaspoon baking powder

Leftover almond pulp are about to visit the oven for the next 2 hours. Slow drying, lowest temp ~ 95 C - 200 F.

It’s time for #Cocoa #Almond #Milk

1 cup almond soaked for 48 hrs, rinsed and blended with 2 tblspn of 🍯 and cocoa powder and some Himalayan salt. Strained and ready to be refrigerated.

Still not sure what to do with pulps, probably will make some almond meal later.

As a useful rule of thumb, never cook your 🥩 without #rosemary, it’s just a waste without it, also preferably use cast iron skillet. It makes much difference. Juicy inside and sizzling outside. Be generous with #butter too.

August has always been a busy month since I usually do the preservation of the yield, either dry them or make something like jam. For figs it’s actually both. This batch is going to be used for fig jam. It’s gonna last the whole year. I’ll make a note once it’s done.
