You mentioned that you are wary of onboarding the farmers to btc, and exposing them to fiat price volatility.

#[1]​ and colleagues have a solution in #[2]​ called stablesats. Blink wallet users can effectively hold a synthetic usd analogue using this capability. Perhaps you could test this approach with your local farmers.
