One thing is clear: I will never be a steak influencer

My process for cooking a steak:

1) pat dry and coat all sides with kosher salt and rest on a cooking rack for at least 45min

2) preheat stainless or cast iron skillet to about 425°. It’s ok if the tallow smokes a little bit

3) add beef tallow to hot pan for lubrication

4) add steak to pan and flip every 30 seconds until it reaches desired temp (125°F for most cuts for me)

5) evacuate the pan and let steak REST on wooden cutting board for ten minutes.
