Pan-Fried Salmon & Green Goddess Salad
A fresh, nourishing meal packed with flavor and goodness!
Crispy seared salmon paired with a vibrant, herby salad tossed in a tangy mustard dressing—this one’s a keeper!
Ingredients:
• 125g salmon fillet
• 1 tsp olive oil
• Salt & pepper
• 1/4 head iceberg lettuce
• 1/2 cucumber
• 1/2 cup edamame
• 1 spring onion
• A few cornichons
• 1 tbsp capers
• 1/4 avocado
• 1 tbsp chopped dill
Dressing:
• 1 tsp English mustard
• 1 tsp wholegrain mustard
• 1 tsp honey
• 1/2 tsp red wine vinegar
• Squeeze of lemon juice
Instructions:
1. Microwave edamame (2 mins), dice avocado & mix.
2. Slice lettuce, onion, cornichons; chop cucumber, capers & dill. Combine.
3. Whisk dressing ingredients & mix into the salad.
4. Pan-sear salmon until golden on both sides.
5. Place salmon over salad, season, garnish with dill sprigs.
